An excellent product that encapsulates the millenary tradition of cheesemaking and the passion of local master cheesemakers, guardians of an ancient knowledge passed down from generation to generation.

The Caciocavallo Cilentano is produced exclusively with raw cow's milk from local farms, where the animals are fed naturally and roam freely among the Cilento hills.
The processing is completely artisanal:
The milk is curdled and hand-cut into small granules.
The mass is then pulled in hot water, shaped into its unmistakable pear shape with a pronounced head, and tied with string for aging.
Aging follows for a period of at least 30–60 days, during which the cheeses are turned and brushed by hand, promoting the formation of a golden and compact rind.
