The processing of Cacioricotta combines the production techniques of cacio and ricotta, giving the cheese an inimitable texture and flavor. The artisanal process involves the use of cylindrical molds, which give the cheese its characteristic shape. Each piece of Cacioricotta weighs about 250 grams, a perfect size to fully appreciate its flavor.
The dry salting, carried out manually by rubbing fine salt on both sides of the cheese, enhances the authentic taste of Cacioricotta.
